Sour Cream, Cherry, and Tequila Paletas (recipe by Fany Gerson)

• 8 ounces stemmed and pitted cherries, fresh or frozen
• 1/3 cup confectioners’ sugar
• 2 teaspoons freshly squeezed lemon juice
• 2 tablespoons silver or blanco tequila
• 1 1/2 cups whole milk
• 1/2 cup granulated sugar
• 1/4 teaspoon salt
• 1 vanilla bean, split lengthwise, or 1 teaspoon pure vanilla extract
• 1 1/2 cups sour cream

Put the cherries in a nonreactive saucepan with the confectioners’ sugar and cook over medium heat, stirring, until the mixture comes to a boil and the sugar has dissolved. Lower the heat, stir in the lemon juice, and simmer, stirring often, until the syrup has thickened and has a consistency like maple syrup. Remove from the heat, stir in the tequila, and refrigerate until completely chilled.

Drain the cherries, reserving the liquid for another use (soda!). Combine the milk, granulated sugar, and salt in a medium saucepan. If using vanilla bean, scrape the seeds into the mixture, then add the pod. Cook over medium heat, stirring, until the sugar has dissolved and the mixture just comes to a boil.

Remove from the heat, add the sour cream, and stir with a whisk until completely smooth. If using vanilla extract, stir it in at this point. Let cool slightly, then discard the vanilla bean and refrigerate the mixture until completely chilled.

Put a bit of the sour cream mixture into each of your molds, to a height of about 1 inch. Freeze until the mixture begins to set, about 30 minutes. Divide the drained cherries among the molds, then pour in the remaining sour cream mixture, dividing it evenly among the molds.

Freeze until solid.

Ingredients:

Brownies:

• 8 tablespoons unsalted butter
• 4oz. unsweetened chocolate
• 1 ¼ cups sugar
• 1 teaspoon vanilla extract
• ¼ salt
• 2 large eggs
• ½ cup all-purpose flour



Snickers Cheesecake Layer:

• 1 large egg
• 1 tablespoon pure vanilla extract
• 8 ounces cream cheese, softened
• 1/2 cup plus 2 tablespoons confectioners sugar
• 8 Snickers (fun size, 4.62 oz.), chopped

Instructions:

Preparation: Heat oven to 400 degrees F. Cover 8×8 pan with bake spray.

Brownies:

1. Place butter and chocolate in a double boiler or a bowl over simmering water. Stir frequently until mixture is melted. Remove chocolate mixture from heat and stir in sugar, vanilla and salt. Add the eggs one at a time, stirring until each is incorporated before adding the next. Stir in flour and beat with a wooden spoon until mixture is glossy about 1 minute.

2.  Scrape the batter into the pan and bake for 20 minutes, or until the brownie starts to pull away from the sides of pan. While brownies are baking prepare ice bath. Fill a pan with ices cubes and water ¾ inch deep (yes, this really does help the brownie). When the brownies are done baking, remove the pan from the oven and place it in the water bath. Allow brownies too cool completely in the water bath.

Snickers Cheesecake Layer:

1. Add all ingredients in a bowl and mix to combine. Pour on top of cooled brownie and bake for about 25 to 30 minutes or until set. Cool to warm then press chopped Snickers into cheesecake layer.

Create a funky drinking vessel for your VnC Cocktail by following this simple ‘Marbled Glassware’ tutorial.

You’ll need:

• flat bottomed glassware
• variety of colourful nail polish
• clear nail polish
• a disposable plastic container
• nail polish remover
• painters tape
• toothpicks

Mask off the bottom of the glass with painters tape.

Fill a disposable, plastic container with water. Open all the nail polish bottles and start dripping polish into the water, one color at a time.

Layer the colors one on top of the other. Take a toothpick and pull out the polish to create a swirly pattern, starting from the center. Work quickly as the polish will start to harden and clump up over time.

Submerge the bottom of the glass into the polish. Allow the polish to collect around the sides of the glass and pull out carefully. Little air bubbles may form but that is to be expected! Before marbling the next glass, take a clean toothpick and sweep up any excess polish from the water.

Allow to dry completely before applying a layer of clear polish.

Once everything has dried, remove the painters tape and touch up with nail polish remover and a cotton swab.

Your glowing glasses are finished! *Glassware should be hand washed only.

2.  The life of eccentric billionaire Kim Dotcom is being made into a documentary, according to reports.  Actor-producer Donovan Leitch and Alex Mardikian, a friend of Dotcom, told The Hollywood Reporter they are producing a documentary on the head of file-sharing website MegaUpload.  Via NZ Herald

Ingredients:

4 lemon quarters
Superfine Sugar
1 cup vodka
1 ounce triple sec
1 ounce fresh lemon juice
1 ounce simple syrup (see below)
1 ounce blackberry puree (see below)

Directions:

 Preparation:
Four 9oz martini glasses.
Rub the cut lemon around the rims, moistening a 1-inch-wide band.
Sprinkle the sugar on a small plate and coat the rims.
Chill the glasses until serving time.
Fill a martini shaker with ice and add the vodka, triple sec, lemon juice, simple syrup and blackberry puree.
Shake robustly for 10 seconds and strain into glasses.
Serve immediately.

You can make superfine sugar by processing granulated sugar in a food processor or blender for 1 minute.

Simple syrup:

In a saucepan, heat 2 cups sugar and 2 cups water
Cover and simmer for 2 minutes, until sugar dissolves
When the syrup is cool, pour it into a glass jar with a lid

Berry Puree:

1 cup whole blackberries, fresh or thawed frozen
Process berries in food processor until smooth
Strain through a fine mesh sieve to remove seeds
Yields 1/2 cup puree
Can be kept in the refrigerator for 3-4 days or can be frozen for up to one month.
